Made with our Chocolate and Smoky Marshmallow Crunchy Toasted Breakfast Lentils, these crispy, chewy squares deliver a sweet, smoky, s’mores-like flavor.
By swapping out traditional rice cereal for crunchy, toasted lentils, we’ve created a treat that’s packed with protein and fiber. Plus, it’s so delicious, this better-for-you ingredient swap will have the kids begging to eat more lentils!

Why Lentils?

- Nutrient-Dense: Lentils are rich in essential vitamins and minerals, including iron, folate, and potassium.
Ingredients:
8 oz (2 x 4 oz bags) Chocolate Crunchy Toasted Breakfast Lentils
8 oz (2 x 4 oz bags) Smoky Marshmallow Chocolate Crunchy Toasted Breakfast Lentils
14 oz vanilla bean marshmallows (we used Hammond’s)
2 tbsp filtered water
Pinch of salt
Optional: 3 tbsp olive oil (for better cohesion) + 1 tsp olive oil (to coat the pan and prevent sticking)
Tools Needed:
3-quart (or larger) saucepan
8x10 baking dish (or 9x9)
Directions:
- Prepare the Baking Dish: Coat your baking dish with 1 tsp of olive oil to prevent sticking. For an oil-free option, line the dish with parchment paper. Set aside.
- Melt the Marshmallows: Place a 3-quart saucepan over low heat. Add 3 tbsp olive oil (if using), filtered water, and marshmallows. Stir frequently until the marshmallows are fully melted (about 8-10 minutes depending on your stove). Remove from heat immediately to avoid burning.
- Combine Ingredients: Quickly mix the chocolate and smoky marshmallow crunchy lentils into the melted marshmallow mixture. Stir until evenly coated.
- Transfer to Dish: Pour the mixture into the prepared baking dish and press it down evenly.
- Cool and Slice: Allow the treats to cool for 1 hour. Once firm, slice into squares and enjoy!
