A sprinkle of pure magic: Lentil Telepathy's Crunchy Toasted Lentil Toppers.
We may be partial, but these crunchy flavor bombs aren't just any lentils. They're toasted to perfection, offering an incredible texture that perfectly complements the soft potato and creamy toppings. Plus, they come in three savory, mouth-watering flavors: Barbeque, Cheddah, and Peri-Peri (Chili-Lemon). Imagine the possibilities!
(Think of them as the perfect high-protein superfood swap for bacon bits, offering all the satisfying flavor and texture without the added oil or fat. Our crunchy lentils get bonus points for being low calorie, too – 1/3 cup is just 100 calories, so loading up doesn’t mean loading up on unwanted calories.)
This isn't just a recipe; it's an invitation to create something truly special. Whether it's Super Bowl Sunday, a birthday bash, or just a Tuesday night gathering, this loaded potato skin bar will elevate any occasion.

Let's get cooking!
Prep Time: 25 minutes Cook Time: 80 minutes Makes: 12 potato skins
Ingredients:
- 6 russet potatoes
- 1 cup dairy-free sour cream or Greek yogurt
- 1/4 cup green onions, chopped
- 1/4 cup red onions, chopped
- 1 avocado, sliced
- 1/2 cup Sweet n Tangy BBQ Lentil Toppers
- 1/2 cup Cheddah Lentil Toppers
- 1/2 cup Peri-Peri Chili Lemon Lentil Toppers
- Salt to taste
Sauce:
- 1/4 cup tahini
- 1/4 cup oat milk
- 2 tsp nutritional yeast
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
Tools Needed:
- Aluminum Foil
- Baking Sheet
- Measuring Cup
- Utensils
Directions:
- Preheat and Prep: Preheat the oven to 400 degrees Fahrenheit. Wash your potatoes and pierce each potato with a fork 3-4 times. Wrap each potato in foil, ensuring about 1/2 tsp of water is included in the foil packet. (Alternative: Microwave by wrapping a wet paper towel around the potato and cooking for 5-7 minutes. Forgoing foil? Bake directly on the sheet pan, spritzing with water every 15 minutes to retain moisture.)
- Bake the Potatoes: Bake the potatoes for 50-60 minutes, or until soft.
- Whip Up the Sauce: While the potatoes are baking, combine all sauce ingredients in a small bowl or measuring cup and mix until smooth.
- Cool and Slice: Once the potatoes are ready, remove from the oven and let them cool slightly. Increase oven heat to a broil. Slice each potato in half lengthwise and remove about half of the potato flesh, leaving the skin and a 1/2-inch layer of potato.
- Broil with Sauce: Using a spoon or basting brush, coat the inside of the potato skins with the prepared sauce. Broil for 15-20 minutes, or until they begin to brown. Check frequently as oven temperatures vary.
- Prepare the Toppings: While the potatoes are broiling, prepare your toppings. This is where the fun begins! Beyond the basics like sour cream, green onions, and avocado, the star of the show is Lentil Telepathy's Crunchy Toasted Lentils! These oil-free, protein-packed lentils are the perfect crispy addition, offering a satisfying crunch without the greasy mess. They're a fantastic high-protein alternative to bacon bits, delivering big flavor in every bite. Mix and match the Cheddah, Peri-Peri Chili Lemon, and Sweet n Tangy BBQ flavors for a personalized touch. Try combining the Cheddah with either the Peri-Peri or BBQ for a sweet and savory experience, or go wild and use all three for a flavor explosion!
- Assemble and Enjoy: Once the potato skins are golden brown and the toppings are ready, let your guests create their own loaded masterpieces! Set up a bar with all the ingredients and let the snacking commence!
Pro-Tip: For an extra touch, offer other toppings like shredded cheese (dairy-free or regular), black beans, salsa, or jalapenos.
